This chutney is a great addition to any pork dish during the holiday season. The apple sweetness is a common supplement for thick-cut pork chops, a pork roast, and even a pulled pork platter. This specific version, my personal favorite, features baking spices that will perfume the dish to elevate it past its rather diminishing appeal.

The Breakdown:

  • 11oz Red Onion (Medium Dice)

  • 6oz Cosmic Crisp Apple (Peeled Large Dice)

  • 1tspn Kosher Salt

  • 1/3tspn Ground Allspice

  • 1/3tspn Ground Nutmeg

  • 1/4tspn Ground Cinnamon

  • 2tspn Turbanado Sugar

  • 2oz Olive Oil

  • 1/2oz Unsalted Butter

  • 1/2oz Lime Juice

The Fun:

  1. In a 1 quart pot, add diced onions and olive oil. Turn to medium-low heat.

  2. Cook slowly until onions start to lose color and turn translucent, then add 1/2tspn salt.

  3. Add apples and butter, lower heat to low and allow it to cook for 15 minutes - stir every 3 minutes.

  4. Add allspice, cinnamon, sugar, and nutmeg to pot and stir thoroughly.

  5. Cook for 5 minutes, then add lime juice and remaining salt, stir thoroughly.

  6. Allow the chutney to rest for 10 minutes off heat before serving.
